Can evaporated milk be diluted for drinking in a pinch?

Yes but it doesn't taste that god, it is better than drinking reconstituted powder milk.

It is great as coffee creamer.

I guess so but it wouldn't taste very good. Why would you ever have such a "milk emergency" that you couldn't just run to the store for more? It would be fine for baking, but it's not so good for drinking.
