Yes they can, and you can never truly hide your IP Address...at least not from those of us who know how to find it/have the resources to do so.  Moral of the Story - Behave, and you have nothing to hide.

Yes they can, they have to.  If you want to call your best friend, you have to dial numbers on the phone.  The same is true for the internet.  If you want the game server to dial you, you have to give them your "phone number".  In internet terms, this is your IP address.  It does you no good to hide it, as "people" (servers) wouldn't be able to call you.

The best you could do is use a proxy.  A proxy acts as a mediator between your computer and the other computer.  They are usually to slow to allow gaming however.
