ofcourse they can, I've held a few and believe me they let you know when they are mad mouth opened and a high pitched noise coming out. They "sip" l**k nectar from flowers. They also hunt very small insects like spiders. They even use spider web to make their nests.

Of course they can open their beaks..their main diet is actually insects so they have to catch them in their beaks.  They also feed on nectar from flowers and that is why their beaks are so long..they are specially adapted for it.
