    Wild Rice Hotdish

    3 c. cooked wild rice

    1 lb. ground beef

    1/2 c. chopped onion

    1 tbsp. oil

    1/4 c. chopped celery

    1 can each - cream of mushroom soup, cream of celery soup, cream chicken soup and chicken with rice soup

    Soy sauce (optional)

    Brown hamburger, drain. Saute onion and celery in oil until tender. In a large bowl, combine cooked wild rice, hamburger, onions, celery and all the soups (not diluted). Bake in a casserole at 350 degrees for 45 minutes. Season with soy sauce if desired. (1 cup raw rice should equal 3 cups cooked.)

    Grilled Chicken with Herbs

    INGREDIENTS

    2 tablespoons chopped Italian flat leaf parsley

    2 teaspoons fresh rosemary, minced

    2 teaspoons chopped fresh thyme

    1 teaspoon dried sage

    3 cloves garlic, minced

    1/4 cup olive oil

    1/2 cup balsamic vinegar

    salt and pepper to taste

    1 1/2 pounds skinless, boneless chicken b*****s

    DIRECTIONS

    In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.

    Preheat grill to medium high heat OR set oven to broil.

    Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

  3. The two recipes mentioned below are ideal for diabetic patients. This can be given to them as an evening snack. The carbohydrate content is less and is rich in protein and fibre.  

    Ragi Adai (to serve one person)

    Ingredients

    Ragi Flour - ½ cup

    Channa Dhal - 1 tbsp

    Gram Dhal - 1 tbsp

    Curry Leaves - 1 tbsp

    Onion - 1 Chopped

    Salt to taste

    Chillie powder - to taste

    Oil - 1 tsp

    Water - as required

    Procedure

    Soak Channa dhal and Gram dhal for 20 - 30 minutes and grind coarsely. With the Ragi flour add salt, chillie powder and the ground mixture and mix well with water to a thick consistency. In a hot tava pour this and sprinkle chopped onions and curry leaves on it. Add some oil to the sides and let it cook on a slow flame. Turn it around till done and serve hot with skimmed curd.

    Diabetic Dessert Recipe: Broiled Fruits with Vanilla Ice Cream

    This diabetic dessert is a light, delicious dessert that mixes fruit and ice cream, two sweets that work great together. In order to make this diabetic dessert, you'll need the following ingredients:

    2 cups fresh raspberries

    1/2 cup simple syrup -- See Recipe

    1 teaspoon fresh lemon juice

    2 peaches -- peeled and sliced

    2 plums -- sliced

    2 nectarines -- sliced

    2 tablespoons butter -- melted

    6 scoop vanilla ice cream

    STEP ONE: For Fruit Puree--

    Place raspberries, simple syrup, and lemon juice in a blender and puree until smooth. Strain out all seeds and store in the refrigerator until ready to use.

    STEP TWO: Assembly--

    Spoon some of the puree onto plates and arrange the peach, plum, and nectarine slices in a decorative manner on the puree and lightly brush the fruits with the melted butter.

    Broil until the fruits are warmed through. Place a scoop of vanilla ice cream in the center of the plate and serve immediately.

    This diabetic dessert will melt in your mouth, taking the smooth texture of mousse and putting a hint of raspberry that will tantalize your taste buds with fruity sweetness. In order to make this diabetic dessert, you'll need the following ingredients:

    2/3 c. Strawberry Fanciful

    1/8 tsp. cream of tartar

    2 egg whites

    1/2 c. whipping cream

    Add cream of tartar to egg whites, beat until stiff, but not dry. Fold into Strawberry Fanciful. Fold the whipped cream into the fruit mixture. Chill before serving or freeze for frozen mousse. Use any of the Fanciful flavors for variation: Strawberry, blueberry, orange pineapple, pineapple berry or peach.
