Can i precut bananas the night before i make turon in the morning?

I am going to make turon (banana lumpia) in the early morning for a meeting and work. Is it ok if i pre cut the bananas and wrap them in the lumpia wrapper the night before and keep them in the refrige so i dont have to worry about doing that in the morning?

  1. Yes, because you're going to fry them either way.

Yes you can precut your bananas and wrap your turon the night before, provided that you freeze them afterwards if you're not going to fry them right away.  Bananas do not turn brown when you freeze them, and frozen turon are easier to handle rather than turon you only kept in the fridge (they fall apart more easily).

  3. Bananas dont last long once they are cut, esp if they are already ripe.  They oxidize and the sugars start to break down, they also start to turn that nasty brown color and become mushy.  Bananas take just literally seconds to cut, so why not cut them just before use?  You will get a better tasting turon!
