  1. Yes, you can.  The substitution has to be in equal weights.  The industry standard for gelatin sheets has them weighing in at 1/10th of an ounce or 3 grams per sheet. Make certain that your sheets follow the average, as there is a small chance they may not.

The average tablespoon of powdered gelatin weighs 1/3rd of an ounce, or about 9 grams.  The average envelope of unflavored gelatin weighs ¼ of an ounce or about 7 grams.

You’ll need to submerge the sheets in water before you use them.  They need to be softened; otherwise they will not work properly.  They have to be fully submerged; other than that, the amount of liquid used to soften them isn’t important.

  2. Yes you can I am a former professional chef and have used the "Blatt Gelatine" from Germany for years it is 2 sheets per 1 1/2 teaspoons of dry, and they are easier as you soak them and add them in with no issues with dissolving or blending with the liquid or even cold foods and they set faster.

They can be expensive as they only come 4 to a package, I just bought some here In Toronto Canada last week, I keep a few package on hand if I want to throw together a low calorie low fat diabetic mousse, they would the best and are more adaptable to acidic things like fruit juices and yougarts I use in my mousse's.

  3. Absolutely

  4. Yes - gelatin sheets are not so easy to find sometimes.  I believe the conversion is 1/2t of gelatin for 1 sheet.  Just bloom the powder 1st.

  5. YES, BUT I DO NT KNOW THE RATIO, CONTACT KNOX GELATIN AND THEY CAN HELP YOU OUT,  I THINK 1 SHEET IS SLIGHTLY LESS THAN  I TABLESPOON, BUT DONT QOUTE ME ON THAT.
