Many plant materials can be used to enhance soil, but it should be easily broken down once in the soil .  Something like coffee beans may contain too much acid for the soil.  If seeds aren't ground they may germinate which is not what you want.  Generally composting these materials for several months can reduce them to a loamy material that benefitsyour soil.  You can compost any yard waste such as leaves and grass clippings.  Turn the pile often, keep it damp and add some lime to reduce acidity if you like.  You can just pile it in the yard and cover  it with a plastic tarp, or purchase a compost bin.
