Can i use single cream (whipping cream/fresh cream) for my ganache?? most recipes say thickened cream?

  1. Yes, it is just whipping cream.  I've made it for years and never seen it any other way.

    They say thickened because when you boil it to pour over the chocolate it will thicken some.
