Yes the will give off moisture. (They will also give off Ethylene (Ethene) gas).

In a paper bag, not noticeably.  But a plastic bag would keep the moisture in, causing it to spoil and rot faster.  Unless it was organically grown and processed, it probably also contains added ethylene and other chemicals to promote 'ripening'.  A plastic bag would imprison those also.
