Can raw diced celery and raw diced carrots be sucessfully frozen?

Anyone done this for convenience/less waste? I want to chop up my celery and carrots separately and freeze so they don't go bad before I can use them. Anyone with experience please?

Yes, I have done it. I measure them into zip lock type baggies and label them with the date I freeze them and the recipe I have planned. then when ready to use, I defrost the liquid from canned veggies that I have frozen and the veggies I have "saved" and toss all into the crock pot with 2 pounds of some kind of meat.

Wonderful time saver as well as not tossing the veggies.

do be sure to keep the leaves of the celery as well, slivering them up too. They have such good flavor in potroasts and soups or stews.

It does change the texture - great for cooking. I usually buy a lot of celery when it goes on sale so I'll have it on hand for my soup making.

*Be sure to lay your diced celery out on a cookie sheet & to a little pre-freeze.

*Once they've hardened a little, stick them in a freezer bag.

This will make it so you can pour them out, versus having to thaw out the big lump.

Just flat out freezing them and then thawing them for later use will make them yuckky. Blanch, drain, pat dry, freeze in 1 layer on a cookie sheet lined with parchemnt or waxed paper then put in baggies.

Hello!

I have a garden and I love going out there in the evening and get what I need for dinner.

So when I have an abundance of veggies I blanch* them and then put them in freezer baggies.

you can definitely freeze carrots, celery does not freeze, it gets wilted and nasty. do not try it. i did ; )
