Some are just more in tune with other people and can tell a lot from little things you say and from your body language.  And sometimes they are really good at making assumptions and drawing conclusions with very little information.

There is some intriguing empirical evidence that some people may have a certain level of psychic abilities--but no one has yet developed them (if they do exist) so that they're reliable in any area except maybe remote viewing.

People notice different amounts of stuff, and are better at reading body language and atmosphere and so on.

That said, I have had many strange experiences with my partner where one of us will think something utterly bizarre, and then the other will echo it.

our thoughts are just energies, when we think of something we produce some vibration of energy which people receive it and some people have just more ability to interpret the energy and sense the meaning of it...

Tom ay toe, Tom ah toe.  Call it what you want, it's just semantics.  My husband would tell you I can read minds, but I would say I sense minds' thoughts.
