My BF is craving yellow/mixed rice for dinner this week-end but I don't know what to make cause I'm tired of the same stuff.

Any ideas/recipes?

  1. Add some beans to it.

  2. Keep it simple, beef stew.

  3. Chicken and a veggie.

  4. Cajun Fried Chicken or Pork

4-5 boneless chicken b*****s, boneless pork chops

1 cup of self-rising flour, unsifted

    1 tsp garlic salt

    1 tsp cayenne pepper

    1tbs Dijon mustard

    1/3 cup Tabasco

    ¼ cup water

    1 – 1 ½ cups oil, for frying

Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.

Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.

Heat vegetable oil in large skillet on medium high heat.

Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.

    Serving Suggestions:

Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.

    or

Spicy Cajun Grilled Shrimp, Fish, Pork, or Chicken

1/3 cup soy sauce or Kikoman Teriyaki Marinade

    ½ cup virgin olive oil

1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it

    ¼ cup sesame oil

    ¼ cup fresh lemon juice

    2 tbs fresh ginger

    2 tsp dry mustard

    2 tsp tabasco

32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)

Bamboo skewers (1 for about 5 shrimp)

Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.

This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs.

  5. How about some grilled chicken with green beans. Or a steak with a green salad. Some type of meat with broccoli and cheese. Just think like this. You need a meat/protein, a colorful vegetable, and your rice/starch.

  6. I could sit down and just have that for dinner. Mmmm. But if you get some chicken with the bones in and skin on sprinkle with seasoned salt and popcorn butter flavor and a drizzle of honey. Bake and then either remove the skin or eat it as is.

Season some flour and dredge the chicken in the flour mix. Brown and bake or just brown on both sides and then reduce the heat and cook until the chicken is done.

    Porkchops would be good too.

  7. You can make a chicken breast seasoned with lemon pepper and season salt, season the chicken breast with that, and either grill or bake, or even do on stove top, and serve with a baked potato, or mashed potatoes, maybe some broccoli and cheese.

  8. Grilled Pork Chops (can do in a skillet) seasoned w/ S&P, onion/garlic powders, paprika

Some sort of veggie:  Steamed Broccoli, Green Beans, Greens, a  green salad of some sort, maybe beets
