  2. You're lucky to have peaches!  I found some for $40 a bushel, but one local place was asking $100 a bushel here!

    I like to use honey - this is from the book "Putting it up with Honey" by Susan Geiskopf



    Peaches

    Yield 5 qts.

    10 lbs peaches

    1 1/2 qts. water

    1 3/4 c. honey

    Dip the peaces in boiling water for one minute, then into cold water.   Peel and pit.  Cut into halves or quarters as desired, and treat to prevent darkening.  To prepare the syrup, heat the water and honey to a boil until honey is dissolved.  pack the peaches into jar cavity side down, overlapping the layers.  pack to within 1/2 inch from top of jars.  Pour boiling syrup to the same level.  Complete seals and process for 30 minutes in a boiling water bath.

    I also put a cinnamon stick or two in each jar if I want to spice them a little.  These are great with plain yogurt or morning oatmeal, or just because.

    My children like peaches best when they are dried.  I have to pass out small portions to make them last all winter, or the kids would eat the whole gallon jar in a day or two.
