  1. Chicken Samosa FIlling



    500g minced Chicken

    1 onion

    2 cloves of garlic crushed

    1teaspon curry powder

    ½ easpon chilli powder

    1 teasmon ground tumeric

    ½ teaspon gorund roasted cumin seeds

    1 fresh chilli finaly diced

    1 tspn chopped mint or corriander

    ½ tspn fresh grated ginger

    salt and ground pepper to taste

    juice of half a lemon



    Heat the oil in a frying pan, add the onion and garlic mix in the spices and seasoning and fry until soft. Add the mince, stirring until cooked. Remove from heat and stir in the mint and lemon juice.

    Now it's time for the pastry.

    Making the Samosa Pastry



    You don't have to make your own pastry. You can simply buy some ready-made pastry from the shop. For samosas you want to fry, use Filo Pastry and for samosas you want to cook in the oven use Puff Pastry.

    This recipe will make enough pastry for 24 samosas and you will need:

    225gm. plain flour

    2 tspn. salt

    2tblspb. vegetable oil

    80 ml warm water.

    Mix flour and salt into a bowl. Make a well into the centre and add the oil and enough water to make a firm dough. Knead the dough on a floured surface until smooth and roll into a ball. Cover in plastic wrap and set aside at room temperature for 30 minutes.

    Divide the pastry into 12 equal pieces. Roll each piece into a ball and roll out into a circle of 15 cm. Divide this circle into two equal pieces with a knife.

    Brush each edge with a little water and form a cone shape around your fingers, sealing the dampened edge.

    Fill the cases with a tblpns of your chosen mixture and press the two dampened edges together to seal the top of the cone.

    Deep fry the samosas in hot oil until crisp and brown take out and drain on a paper towel.


  2. VEG SAMOSAS (punjabi samosas)

    To make Dough

    Maida (Refined flour)

    Whole roasted jeera (cumin seeds) (1 spoon)

    Oil (good quantity)

    Salt (accord taste)

    Yougurt (about 3-4 spoons)

    Water

    Mix all well the above ingredients and add water accordingly do not make dough soft nor hard keep aside for 1 hr by covering with a cloth.

    For stuffing

    1.Boiled poatoes

    2.Boiled Green peas

    3.Ginger-Green Chilly patse (accord taste)

    4.Gram Masala powdered (accord taste)

    5.Whole Ajwin (little)  

    6.Whole Coriander seeds (little)

    7.Amchur powder (Dry mango powder) (little)

    8.Roasted Jeera powder (Cumin powder) (little)

    9.Chopped coirander

    First smashed potatoes and peas then add no.3, 4,7,8 &9 mix well.

    Take a pan put few drops of oil once hot add 5 &6 start to crackle turn off flame alow for few seconds to cool and add to the above mix and again mix it porperly.  

    Now take dough make medium thick roti and cut into half with the help of knife.Take that one half and put the stuff and make a shape of samosa like triangle press the edges tighly with hand and deep fry in medium hot oil on slow flame. *No need to stick with any gumpaste it will not open will frying *

    KHEEMA SAMOSAS (Mince Mutton or Beef)

    Take the ready made layers of samosas which will easy avl in supermarkets,indian shops.

    For filling

    1.Mince

    2.Ginger- garlic paste

    3.Turmeric Powder

    4.Red Chilly Powder

    5.Coriander Powder

    6.Garam Masala Powder

    7.Chopped Onions & Green chilly

    8.Lemon juice (few drops)

    9.Coriander & mint chopped

    10.Oil

    Take little oil make it hot add no.2 and stir for few seconds add 3,4,5 and cook few seconds then put mince keep cooking add very little water and pressure cook about 3 whisle.Once done if water remains then cook on slow flame till water gets dried up.

    Alow to cool then add 6,7,8,9 and mix well.

    Take one ready made layer put the stuff give shape of samosa and here stick the edges with eggs (just with your finger) and press properly, deep fry in meduim hot oil this will help to become crispy.Serve hot.

  3. for pastry

    -> either get filo pastry or go to any Asia shop and ask for spring roll pastry

    basic filling

    -> curry powder

    -> potatoes ( dice and cook)

    -> salt

    -> creme / yogurt / thick coconut milk (just enough to bind the mix together)

    -> cooked chicken / tuna/ sardine (dice to bite size), for vege : add mix frozen veg.

    -> onions

    -> for extra heat: chop chili

    fried onions till brown and soft .

    in a big bowl add all ingrediant together... and leave it aside for 1/2 hour ( minimum)

    take the filo sheet / spring roll pastry cut it into a long rectangle strip... Place the filling at on end and fold the edge to make it into a triangle shape and just fold along...

    seal the edge of the sheet with egg.. and deep fried the samosas....till golden brown..
