can i put all my wii data and channals on my sd card,restart my whole wii,then put all my channals back

If you mean a factory reset of the Wii, I don't think that will work.

When copied to an SD card, they're "encrypted" in a way so they can only work on the same system that they were copied from.  A reset may make the system think that it wasn't the originating Wii it was copied from.

Game save data still may work, but I doubt channels will.

But as long as you log in with the same nintendo ID to the Wii Shop channel that you did the first time, it will still know which software you bought, and allow you to download it again for free.
