  1. We just had spaghetti squash the other night for dinner and this is how we had it..

    I cut the squash in have and scooped out the seeds and strings. I put them in a roasting pan with water cut side down and poked holes in the squash. I baked them for about an hour at 350.

    When they were cool enough to handle I scooped all the squash out into a bowl.

    We cut up summer squash and zucchini onions and red and green peppers. Put them all in a pan with a little butter and olive oil. When they started to get a little soft we added a can of stewed tomatoes and mixed the squash with all the veggies. when heated through we added some parmesan cheese. It was awesome.. You can add whatever you like for veggies and you can use whatever cheese you like. ENJOY!

  3. For an easy recipe:

    Stab the squash in a few places around the squash with a knife so that steam can escape while cooking.  Place the squash in the microwave and cook for about 5-minutes on high, turn it over and do for another 5-minutes.  (This is usually a good amount of time for about a 1-2 lb squash.  Cook more or less for smaller or larger.

    When it's soft to the touch, it should be done.  Cut it in half lengthwise (top to bottom) and then let it cool a bit because it will be hot.  You might want to wear an oven mitt on the hand that's holding the squash.  Once it's not too hot to deal with, then take a fork and gently scrape out the seeded area and dispose of.  You can then use the fork to scrape out all of the squash "meat".  It will come out easily in shredded lengths resembling spaghetti.

    You can add whatever you want to it.  I usually do vegetables, grated cheese and pour tomato sauce over it.  Try experimenting with different ingredients.

    makes:6 servings

    1 medium spaghetti squash (about 3 lb)

    4 oz uncooked spaghetti, broken in half

    1/4 cup chopped fresh parsley

    2 tablespoons grated Parmesan cheese

    1 tablespoon margarine or butter, melted

    1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves

    1/2 teaspoon garlic salt

    1. Prick squash with fork; place on microwavable paper towel in microwave oven. Microwave on High 8 minutes; turn squash over. Microwave 8 to 11 minutes longer or until tender. Let stand 10 minutes.

    2. Meanwhile, cook and drain spaghetti as directed on package; return spaghetti to saucepan.

    3. Cut squash lengthwise in half; remove seeds and fibers. Reserve one half for another use. From other half, remove spaghetti-like strands with 2 forks; reserve shell. Add squash and remaining ingredients to spaghetti in saucepan; toss. Return spaghetti mixture to squash shell to serve.
