  1. just get some chicken/pork/lamb and some tzatziki sauce and make a greek/ceasar salad and that is like my favourite meal it is sooo good and its a great summer meal too!


  2. Cheese is one of my favorite foods and these are wonderful Greek appetizers.

    Fried Cheese (Saganaki tyri)

    250 gr. any hard cheese, kefalotyri Parmesan, Gruyere or Greek Cypriot haloumi

    50 grams butter

    Cut the cheese into 1 cm thick slices. Heat the butter in a frying pan and put the slices in. Turn the heat down a little and let it cook for 1-2 minutes until it bubbles. It should not turn brown, but should look creamy and sticky. In Greece the cheese is usually cooked in small frying pans, so they can be taken straight to the table. Sprinkle a little lemon juice on top and some black pepper and offer it with fresh bread.

    Spice cheese spread (Tirokafteri)

    8 oz package cream cheese

    1 lb feta, crumbled

    1 cup lemon juice

    1/4 tsp ground White pepper

    1/2 cup olive oil

    1 cup half&half

    Soften cream cheese in large bowl with mixer. Add feta, lemon juice, and white pepper. Slowly add olive oil until all the oil is absorbed. Mix in half&half until the miture is smooth and soft. If the mixture is hard, add a little more half&half to soften. Add roasted peppers. Serve with bread.

    Baked Cherry Tomatoes and Feta (Mezes me ntomatakia kai feta)

    1 tbspn minced garlic

    2/3 cup olive oil

    2 lb cherry tomatoes

    1 loaf focaccia bread (or French bread) heated

    6 oz soft feta cheese

    2/3 cup fresh basil cut chiffonade

    Steep garlic in olive oil at least 1/2 hour. Preheat oven to 400 degrees F. Wash and stem tomatoes and cut them in half (put unwrapped bread into the oven). Put tomatoes in a shallow baking dish, pour olive oil and garlic over and toss lightly. Bake 10 minutes; sprinkle over chunks of cheese (cut into 1/2-inch pieces) and slivered basil. Stir gently. Serve with bread to mop up juices.

  4. Greek Chicken Pie (Kotopita)

    Serves 3-4

    Try a slice of this delicious chicken, cheese and onion pie at any time of the day; it's delicious

    Ingredients:

    1 x two and a quarter pounds (1 kilo) chicken, cleaned and washed

    1 lb. (450g) shortcrust pastry

    1 medium onion

    salt and pepper

    2 eggs, beaten

    1 cup of butter

    parsley, finely chopped

    1 cup of kefalograviera cheese, or a hard strong cheese

    Cooking Instructions:

    Boil the chicken in salted water with the onion until tender, making sure that a cupful of the chicken broth remains at the end of boiling

    Remove the chicken and when cooled, remove skin and bones and cut the meat into small pieces

    Mix the chicken meat with the eggs, parsley, pepper and the cheese, then add the juice from the boiled chicken

    Lightly fry the softened onion and add to the mixture

    Butter a medium-sized baking tin then line it with most of the pastry, leaving enough to cover the pie

    Make sure the pastry in the tin is well greased then spread the mixture evenly on it

    Place k***s of butter at various points on top of the mixture

    Cover the mixture with the remaining pastry, buttering the outside of it

    Bake the pie in a moderate oven for 50-60 minutes or until the pie is golden in colour
