  1. INGREDIENTS

    2 pounds ground beef

    1/2 onion, chopped

1 (10 ounce) package saltine crackers, crushed

    salt to taste

    1/4 teaspoon ground black pepper

    1 tablespoon steak sauce

    2 eggs

    3/4 cup water

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine the beef, onion, crushed crackers, salt, ground black pepper, steak sauce, eggs and water and mix well. Transfer to an ungreased 9x13 inch baking dish. Form into a loaf about 6x10 inches.

Bake at 350 degrees F (175 degrees C) for 1 hour, or until center is completely cooked.

    -----------------------------

    INGREDIENTS

1 tsp herbs (fresh or dried, basil, marjoram, rosemary, sage, parsley or dill, etc.) .

    2 eggs .

    1/4 tsp pepper .

2 lbs lean ground beef .

    2 tsps salt .

    1/2 c soft breadcrumbs (or panko) .

4 slices bacon or salt pork

    DIRECTIONS

Step #1 Mix all ingredients except bacon together thoroughly, using your hands or an electric mixer.

Step #2 Pack into a lightly greased loaf pan, or form into a loaf on a baking sheet.

Step #3 Top with bacon (optional; if you choose not to, do not forget to baste every once in awhile with water, bouillon, or equal parts melted butter & wine).

Step #4 Bake in preheated oven at 350 degrees for an hr or until the loaf shrinks from the sides of the pan (you can also use a toothpick, but remember that doesnt always work).

Step #5 Serve with or without a sauce such as mushrooms, or sour cream.

    Hope this helps! =)

  2. I never use tomato products in my meatloaf. All I use is: ground beef, onions, bread crumbs, an egg, and seasonings.

  3. You can use this recipe and omit the ketchup and replace with cream soup, such as cream of onion, mushroom or beefy mushroom.

  5. Nothing in the Meatloaf Regulations says you "MUST" use tomato based anything.

Just leave it out and it will be fine.

  6. I have heard of people using onion soup mix, or just use no tomatoe product at all. You don't have to use it, just don;t use as much binder as you wont have as much moisture to absorb it all.

You could even try italian salad dressing mix, or ranch dressing mix. Or just try a fav salad dressing. Although if it is a vinagerette just make sure you use a very lean choice of meat as the oil will obviously make it more oilly, and fatty.
