...I have no idea what any of those are.  They're organic, I'm sure, but organic chemistry just loves weird names...

Polar molecules have an uneven distribution of electrons.  Different atoms have different affinities for electrons, and if the perimeter of the molecule has different atoms, it will be polar.  The greater the difference in affinity, known as 'electronegativity', the more polar the molecule.
