  1. It's called pate, pronounced pah-tay.  Accent on the last syllable.

  3. The Pâté would be made with normal duck or goose liver. It's a lot cheaper (that's kind of what you find in delis here in the states) .. Fois Gras is a delicacy often traditionally associated with new year's eve in France. It's call Fois Gras because the process of making it involves over feeding a Goose by stuffing the food down it's stomac to the point where the liver becomes sick and inflates as a result. So Fois Gras can litterally be translated to fatty liver but it means rather a sick liver in this case. It's a lot pricier and creamier than Pâté.

  6. Foie gras which means 'fatty liver' in its literal translation. Really delicious when prepared well. Pair with a sweet dessert wine like Chateau d'Yquem and a sweet chutney like pear or plum or even mango. It is either goose liver or nowdays mostly duck liver. Enjoy! {:-)
