Yes it can be done. You're not going to get that much energy from the spent grain though, because most of the useful bits have gone into the beer and you need to do processing on it (which uses more energy) before you can use it as fuel.

Most breweries use their spent grain as cattle feed, which is probably a more efficient use of it.

Yes, and some breweries are already doing it.  But there's not enough to completely run the brewery, just to help.
