Can u freeze pumpkins? Do they come out OK?

  1. If you freeze them just like that,they taste awful when defrosted again. The way to freeze any vegetable is to bring a large pot of water to the boil,plenty salt in the water,and add the cut pumpkin pieces to the boiling water. Bring back up to the boil,remove the pumpkin and put on a tray in the freezer to freeze. Then put into a plastic bag. It's called blanching. Heat quickly and freeze quickly.

I have never frozen a "raw" pumpkin but I have frozen roasted/cooked pumpkin in 1 cup size containers for use in baking at a later date.  The cooked pumpkin comes out just fine.  I prefer to roast my pumpkin because I think it has a better flavor and it's easy to do.  Just cut the pumpkin in smaller pieces, clean out all the seeds and strings on the inside, rub with a bit of olive or canola oil, sprinkle with a bit of salt and roast in a 350 degree F oven until really tender.  Bring out, cool and scoop the flesh into your containers.
