  1. Well, yes, but you don't put in as much evaporated milk and you add some water.  Most cookbooks have a page on subsitutions that you can do.


  2. In what? Probably in baking. Not usually in drinks because it tastes differently than regular milk.

  3. Yes you can sub for an equal amount.  What would you be missing out on when you do this? Evaporated milk has had up to 60% of its water removed. It is a concentrated form of milk  to add richness to a dish and contribute  a creamy texture.   An old trick was to add a T. vinegar to milk to give it more of a buttermilk creamy consistency.  It was used to sub for buttermilk, and interestingly buttermilk is an old substitute for evaporated milk.  So there you have your answer... use an equal amount of milk, and add a T. or more of vinegar to it.  Give it a chance to thicken, say 5 to 10 minutes, and you are good to go.  ;-)
