  1. My fiance grew up in a very similar household--vegetables were always mushy and from a can.  He thought he hated every vegetable until we started cooking together and he realized that fresh, roasted, or other types of vegetables could be delicious and nutritious.

I wrote a great blog post about tips we use to make veggies more tasty:

  2. Get them really drunk hand have them run around flashing people. They will be the talk of the party.

  3. find some indian veggie receipes. they are yummy.

  4. If i am not steaming my veggies i bake them  and has for your fruit if you have extra put them into a blender or food processor don't peel them except for lemon, orange, banana, lime blend them all up well add i small pot of bio live plain  yoghurt and 1 tin of evaporated milk and add ice last and make some thick summer smoothies.

  5. You can season those veggies and put them on your own tacos, pizzas, and pasta dishes (just don't overcook them because you loose nutrients which is essential for the body).  And for fruits try making yourself smoothies and add some rice protein which is found in various supplements.  Make sure you balance your intake of veggies and fruits you will notice boosts of energy daily.

  6. A Veggie Venture is a great blog for ideas having recipes for plants from Asparagus to Zucchini (it's not always vegan or even vegetarian though).

I agree that roasting veggies transforms them especially zucchini, cauliflower and Brussels sprouts (which I never liked much till I had them roasted). So easy too. Cut into bite size pieces (cut the sprouts in half) and toss with olive oil and salt. Simple as that. If you want you can add some minced garlic (or even whole cloves) in to roast too and splash with sesame oil just before serving for added flavor.

You can also grill veggies including corn, zucchini, eggplant, onions, potatoes, bell peppers, asparagus, and more. Cut veggies such as zukes and potatoes into planks, oil, then salt. You can also get special grilling tools for veggies so the smaller ones don't fall through or put on a sheet of foil. Lots of fruits grill up yummy too adding an entire new dimension to them.

One of the best things to do with eggplant is turn it into baba ganoush. In fact, that's the only way I've liked it. :]

Shred up cabbage, carrots, and some kale, add some sliced onions and bean sprouts, toss with a spicy peanut sauce and roll up in a spinach or sun dried tomato tortilla wrap and you have Thai-style salad sandwich that is really yummy (you can add chopped peanuts too).

Berries make wonderful muffins, cobblers, and smoothies.

If you share these with your family it might expand their tastes too.

  7. One tasty dish is to steam your favorite veggies and make a peanut butter with honey sauce to pour over them ~Yum~ they'll probably join you =)

  8. cut && shape them like funny animals!!!

    XD

  9. Stirfry!  So easy and the main ingredients are veggies.  If you are worried about soy, just don't add tofu.  Just pick out interesting sauces at the grocery store so that everytime you make it, it's slightly different.  I also like eggplant 'parm'.  I make my marinara from scratch but you can use canned.  Slice up eggplant, put some sauce on bottom of pan then stack eggplant slices and marinara in a baking pan.  Bake at 350 for about 20 minutes or until eggplant is mushy.  Easy.  No grains, no soy.

Can you eat beans?  I love veggie tacos and burritos.  Your toppings would be veggies and get corn tortillas.  They are a complete protein.

  10. You can cut the vegetables into the shape like the fruit or any things and make a salad?!

  11. you could add spices to them. cut up lots and put them into a spag bol. whenever we make a spag bol, we put in orange, red and green peppers as well as potatos and ... something green but i cant remember what its called XD it looks like a cucumber.

  12. get some veggies (broccoli, cut up carrots, baby carrots, cauliflower, u can use most veggies- they can be frozen or fresh.) put them in a pan, sprinkle some olive oil on top and then put Italian seasoning on them( you can buy it at stop & shop) and out it in the oven for 15 - 25 minutes, or untill they become a little soft. my family love it and it tastes really good!

  13. Get a bunch of different veggies, put them in a baking tin and coat them with olive oil. Now put a bunch of different seasonings on them. Maybe salt, pepper, oregano, basil, soy sauce, or what ever you like. Bake them for about 10 or 15 mins and they will be done, if not a little longer will do. I made that once at a family dinner and everyone loved it!

  14. Try thinly slicing squash and zuccihini with thinly sliced onion saute them in a non stick pan with a little olive oil and chrushed red pepper flakes, You can also make a salsa with grilled pineapples diced with diced red onions chopped mint and parsley a little olive oil red vingear salt and pepper to taste, there are so many web sites you could probably find, to help you. You just need to know how to make what you eat more exciting and have a variety in how you prepare it.( sorry my spelling is the worst)LOL Also if you enjoy yogurt or cottage cheese, maybe you could added that. Are you a vegan or what? Grilled Mushrooms with brown rice flavored with veg broth. The possiblities are endless.
