At the top of the beta mail page where it says Welcome, your name and sign out it says Switch back to original yahoo classic mail click there. If it won't work then try here:   http://us.mgl.mail.yahoo.com/dc/optout?s  Just answer yes

I don't think you can.  Yahoo's determined to push its beta and pretty much ignores what you want in favor of moving everyone over to the beta.  You can go into the beta My Yahoo and restore your old version -- be careful, though, as it may restore you to an earlier version if you've been in the beta version very long, thus losing some of your more recent feed additions, for example -- but the next time you log on you'll find My Yahoo forcing you back into the beta again.  Give it up, they're too big to care.
