Can you can goulash or chili in canning jars?

excuse my spelling but can you can homemade chili or goulash. I am also wondering how long it will keep?

  1. First, you CANNOT can any homemade recipe because there is no way to determine the correct processing times without lab testing the ingredients for their pH values. This is a health and safety issue, and the consequences of ignoring proper canning techniques are well documented and too dangerous to risk.

    You cannot can pasta or foods that contain thickeners because even at the temp of pressure canners, the heat does not penetrate them, and you're right back to that health and safety risk.

    Always use a safe and tested canning recipe. When canning combinations of high and low acid foods, like a recipe for Chili -- you must use a pressure canner and follow the timing directions based on you altitude.

    If there isn't a safe canning recipe that suits your taste preferences, then the correct procedure is to process the main ingredients separately, again using safe and tested canning recipes; like a tomato sauce, or meat with broth, for example.

    Then use those canned products as the basis for preparing your favorite dish at serving time, adding all the other ingredients that make it special to you.

  3. Ive done chili in freezer bags not in canning jars, and I wont ever can goulash if there's pasta with it. But I was able to find you a recipe for Canning Chili which might vary from your recipe, but when you reheat the chili you can always add what you add to it then n there.
