  1. Yes.  Most of the time when you look at the itinerary of your flight before you purchase it, it will show all of the stops, and how long the layovers are.  You can even look for a nonstop flight.

    I will add, though, that sometimes if you are flying on Southwest Airlines, and you have 2+ stops, they may only indicate the number of stops and the first city you stop in.  BUT that's only for if you are supposed to stay on the same plane.  If you have to deboard and get onto a different plane, it will certainly be on your itinerary.  I didn't word that well, but let's say your flight is like this:

    Indianapolis-Chicago.  Change planes.  Chicago-St. Louis.  Stay on the same plane.  St. Louis-Phoenix.  Then your ticket might say "MDW/2", where "MDW" is the airport code for Chicago, and "2" means that you have 2 stops.  In that example, if you really wanted to find out that St. Louis is where your 2nd plane is stopping, you could go to their website and enter your flight number to see if that flight is late or ontime today.  It should then list the cities involved.  The flight numbers generally don't change very frequently.
