Question:

Can you cook sushi rice in a rice cooker?

If so how much rice, how much water & in some recipes I see you have to add other ingredients...

I want the perfect sticky rice to make sushi... please help ;)

  1. Making sushi rice is significantly different than making regular white or brown rice. The sushi rice is a different type of rice that is short and kind of round. It is called Japanica. Because of it being short, it becomes sticky when cooled.You can find it in many large grocery stores, or in a oriental market.

    To serve 4, you will use 1lb of rice, 2 1/2cups of water. For the vinegar mixture, you will need 5 tbs rice vinegar, 1 tbsp of mirin or sake, 3 tbs of sugar and 2 tbsp of salt.

    You have to rinse it really well, and let it drain for about an hour. Put rice in pot with a tightly fitted lid. Bring to boil, reduce heat, and simmer for another 5 minutes. Lower heat and steam for 12-15 minutes. Remove from heat and cover with a tea towel instead of the lid.

    While the rice is cooking, combine the vinegar mixture in a  saucepan and heat gently until the sugar dissolves, stirring constantly. Remove from heat and cool. Spread the rice evenly over the base of a wooden bowl. Run a spatula through like a knife to separate. Do not try to press together. It can become really mushy. Slowly add the liquid while you do this. Fan the rice until it becomes room temperature. Keep the rice in the bowl and cover with a towel until you are ready to make your sushi.  

    Remember that you only have one day to use your rice... never use it the next day. It can be really gross and make you sick. If you want more info, e-mail me. My husband and I make sushi all the time!


  2. This will sound stupid but it really works.  

    If you're using the rice cooker, pour however much rice you think you might need (i'm assuming 4 or 5 cups) into the rice pot and rinse it well until the water runs clear.

    Once your rice is cleaned, level the rice so its evenly flat and start adding water.  Place your hand flat on top of the rice and once the water level almost covers your biggest knuckle, its enough.  

    When you're mixing the Vinegar and sugar(sushi zou?), make sure that the rice isn't steaming hot.  It should be just barely warm and mix the

    vinegar and rice in a large bowl with a spatula using a folding motion.

    My mom's cooked rice like this since I could remember.  I've done this many times, as well.  

      

  3. Yes you can.  However, when I cook sushi rice, I like to cook it in a pot over the stove.  I've tried cooking the rice in a rice cooker, but the rice doesn't come out right.  Read the back of the rice bag.  It will tell you how much water to add to the rice.  Check out www.allrecipes.com.
