Can you eat a marinade as an actually sauce for something?

I have been desperately looking for a Jamaican Jerk Sauce and found a Jamaican Jerk Sauce Marinade. I would like to use it for a Jamaican Jerk Pizza (crust, jerk sauce, chicken, and cheese), but since its a marinade I need to know if its completely edible. I'm sure it is, but would like to get some information before I try.

  1. I would worry that boiling it down to thicken it would intensify the spice too much.  I love jerk flavor, but it can be pretty hot, especially if it's the only sauce!  

    I would make it as the recipe calls for, then taste to see if it's overly spicy.  If so, dilute with some chicken broth.  When you're happy with the taste, thicken with a couple teaspoons of cornstarch mixed with cold water.  (You probably know how to do this already, but get the sauce simmering, then add the cornstarch paste, and simmer only until thickened.)  

    Sounds yummy--hope the experiment's a success.


  2. Yes, it is edible. If you are marinading with it, boil it before using as a sauce. As a sauce I would simmer it a little to reduce it so it's a little thicker.

  3. It's edible if you haven't used it for a marinade already.

    Never reuse a marinade for anything.

    The reason not to use a marinade after marinating meat is because of the salmomella and all the other little meanies that will be in it and not getting it hot enough to kill them when using it for basting while cooking, Especially Chicken.
