  1. The first young lady is correct, it is a member of the cabbage family and comes in green and red, but that is just the outer skin.

    You can freeze it, I do this by peeling and slicing them fairly thick, blanching them for 2-3 minute in salted water, and then cooling them and freezing them on sheet pans then transfer to a ziplok bag for the long haul.

    Pickling or canning them I make the same brine/vinegar solution as for watermelon rind and this works great, jar them up, process for 10 minutes tighten the lids and you will have them for months and they get better with age.

    and can preserve it(can it) however you would have to use a PRESSURE canner not a water bath canner.

    and its not a cabbage...its a root vegetable.  however its related to the cabbage.
