  1. can you freeze WHAT?

  2. Sure, I just zip it in a bag along with extra lime leaves and galanga root when I am making Thai food. Makes it easier to have them ready for another meal.

  3. Yes. However, my Mom who uses this a lot says that if you freeze it, the taste isn't as fresh or strong. So, it's best to use it right away.

  4. Yes, I have done it, I cut up portions/pieces before freezing.

  5. Yes, I use lemongrass when I make Tom Yam (Thai spicy soup).  I put it in a ziplock baggie in the freezer and it stays fresh a long time.  Lemongrass is the best!

  6. Yes. Lemongrass is one type of herb/plant that keeps rather quite well in the freezer. But why the hassle of chopping it yourself when you can buy at already minced and frozen for less than 3$?

  7. not directly answering your question but maybe this will be also helpful :)

i always found fresh lemongrass quite expensive so i tried buying it in a jar and it was very good but a couple of times it became mouldy before we finished it.

now i buy chopped lemongrass in oil

and it's really practical because it's chopped already and also it's quite small and doesn't go off.

i'm sure it's not quite as flavoursome as the fresh stuff but i've been using it when i make curry paste and soups etc. and would recommend it.

  8. Yes, you can.  For long-term storage, cut into 2 or 3 inch pieces and freeze in a ziplock bag.
