Can you freeze zucchini that has been shredded?

I make a lot of zucchini bread and would like to shred and freeze if that is possible. Any thoughts?

  3. Yes, you can.

You can freeze it, just know that the water content will effect the thawed product.  When you remove it from the freezer and thaw it, there will be a good bit of "water" in the bag because of the high water content in zucchini.  Just drain it well before you use it.  Considering you will be putting it in bread, it should be fine.  If you were going to stir-fry it or something like that, it would cause you problems later on.
