can you get food poisoning from instant vanilla pudding that is 7 years past expiration date?

Probably not.  Your biggest risk is that it has bugs or that it is so old that when you make it it won't pudding-ize and will just stay a liquid.

I don't think that it would be harmful, it just probably wouldn't taste good. Look up each of the ingredients on the side of the box and do some research on them
