I am Cuban and we make a dish called pinon. Basically you fry ripe plantains and lay on a paper towel, then you make a picadillo which is basically fresh garlic and onions, lean ground chopped meat, a can of tomato sauce, seasoning (adobo and sazon) and a chicken bouillon cube , then you scramble eggs to fry to make a round flat scrambled egg (thick) pancake- you need about 8 or 10 eggs and  You assemble alternating the two, egg pancake and meat and top with white grated cheese and bake in a 400 oven for 30 min and serve with white rice- we've been making this in my family for years and I have to tell you...its addictive!
