What do you mean used to do?  You know there are still cowboys around, don't you?  I'm talking about the working ranch cowboys.  Cowboys do the following jobs:

Herd cattle

Pull calves (help a cow have her calf)

Fix/build fence

Feed

Rope

Work calves (brand, vaccinate, etc.)

Farm (gotta have hay)

Repair equipment

Work on windmills

Care for their horses

Build watergaps

Chop ice on tanks

Etc., etc., etc.
