Can you help me to prepare for a purchasing nightmare??

I purchase the food for a casino, we have a 4 day cajun festival next month. I always spend a lot of money (casino's money) for this festival every year, but now this year they want to make it all free. Admission was always free, and now they want the food free. Is it even possible to calculate for the mass amounts of food that the public will eat, when there are no limits to when, what, or how often they eat?

  2. Order 2.5 times the amount of food you ordered in last year.  "IF" it was an all you can eat last year...  They will come in by the droves and eat until they burst when it is free...

  3. well start with how many attended last year and calculate based on standard portions.  start from there.  make it flexible and base the following days on day one results.

  4. No, it's not possible.

    I would imagine that if they're giving food away, they expect at some point to run out of food.

    So plan for a set number of people per day x 4 days. And then plan for a little over that. I would think you'd want to come up with a lot of red beans and rice (cheap and easy), and then other things to round that out. I wouldn't show up at an event like that and expect them to have everything available all day long.

    Have them advertise for a "first come, first served" kind of deal, and set a time limit - I see no other way to plan something like this without spending major bucks.
