I want to make a cake frosting, but I haven't been able to find any recipes without lemon juice or eggs.

I'm vegan by the way.

  1. Any vegan cookbook will have icing recipes, and most are without lemon juice.  Check out "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz; she even has vegan "buttercream" frostings.

  2. FOR CHOCOLATE FROSTING:

    10 1/2 ounces extra-firm silken tofu

    2 teaspoon vanilla

6 ounces vegan semisweet chocolate – melted

In blender or food processor, combine tofu, vanilla and melted chocolate ingredients; process until smooth.

You could also try mixing powdered sugar, vanilla extract and soy milk.

  3. Buttercream frosting.

    Chocolate frosting.

I never use egg white in my frosting nor do I ever use lemon juice.

  4. I use a couple -maybe 4 cups of powdered sugar, one stick of margarine, about 1 or 2 table spoons of lard and a cap full of vanilla but I doubt the vanilla does much more that give it a taste you wouldn't miss. yes, I have never used egg or lemon but you can put cream cheese in it for a special taste to and coe coe or peanut butter or other flavored extracts like cherry or strawberry. Throw in some fresh fruyit and cool whip and see how that comes out-you would have to adjust the margarine or lard and the powdered suggar for consistency. Cool whip probably wouldn't be very good unless you were planbning on sticking it in a freezer and filling two layers with ice cream of the same flavor or whip it with some of the berries and then fill between the layers. I don't know but I will be trying this in the nbear future for giggles. ?Sounds tasty!

  6. Peanut Butter Icing:

    3 cups confectioners' sugar

1/2 to 1/3 cup soy milk

    1/4 cup peanut butter

Blend sugar and peanut butter. Slowly stir in soy milk until thick enough to spread. Spread over cooled cake.

  7. tate and Lyle, make a special icing for the likes of fruit cakes, but have never read details so don,t know what is actually in it.  Why not use ready to roll Icing.  What I have done in the past, is beat the Icing well with a drop or two of water, depending on quantity, and that seems to stiffen it a bit

Hope this helps. Tina ps why can,t you use Lemon juice?

  8. You can using the recipie on the back of a box of confectioners sugar or you can sub silken tofu (drained and pressed of course).  I know it's strange but it dosent have a taste. I have used it before and added melted chocolate to make a fudge frosting.
