Can you make a creamy sauce out of fat free milk not using cheese?

  1. It depends on the recipe, some you can, some you cant. If you have a recipe which needs cheese and not milk, then if you use milk, it's gonna be very watery.

    If you don't wanna use cheese, at least use cream. It wont be as runny as milk...

    Ingredients

    2 tablespoons butter

    1 tablespoon chopped onion, if you like

    2 tablespoons flour

    3/4 cup milk - fat free as you like

    salt and pepper to taste, and maybe a sprinkle of nutmeg

    Method

    Melt butter over low heat. Cook onions till transparent. Add flour and stir over the heat for about 3 minutes, until slightly cooked. Add milk, quarter cup at a time, stirring well each time to get out the lumps. Add nutmeg.

    Voila!

  3. hum that is really going to be a tough one are you lactose intolerant?

    is corn starch or any type of thickener a prob elem for your dietary needs. I am going to say YES, Yes  you can' How do you feel about garlic and Black pepper or Sea salt.

    If garlic is no problem for you then here is my  Suggestion

    2 cups fat free milk

    start with 2 cloves of garlic crushed or 2 tsp prepared garlic

      1/2 tsp salt or to taste.

    Bring this so very easy simmer !!!! and watch it closely DO NOT BOIL

    stir , to make sure it is not sticking or scorching on the bottom scortched milk tastes like POO. And burnt garlic equally so!

    Ok take a small dish ( Or a coffee mug works great) and put in 1 TBSP corn starch and 1 TBSP   COLD water

    stir to make a smooth slurry.  A fork works best for this task or a mini wisk.

    make sure that your milk is still simmering LIGHTLY  and pour all of it in at once stir , and dont stop until all is combined or it will be a lumpy mess, allow to simmer for 1 minute and this will be your sauces full thicking capacity and if is not thick enough all more corn starch and water. In the same manner as described above/

    Now remember it will not be really rich sauce it will have light flavor and add other spices or seasonings that you like this is just a suggestion

        

    Also just to add I was guessing that you were trying to make this WITHOUT  the benifit of added fats or lipids of any sort

    if that is not the case by all means add about 2 Tbsp butter and that will add  a alot of richness to the sauce.

  4. This is just a white sauce, rather bland:

    Melt 2 tbsp butter or heat oil, with 2 tbsp flour, over medium heat.

    When golden add 1-2 cups of fat-free milk, whisk to prevent lumps.

    Bring to a simmer & reduce heat, stirring until thickened.

    If you don't want the butter or oil either, use cornflour instead.

    Mix it with 1/2 cup cold water first, then add warmed milk, & combine.
