Question:

Can you make an "egg" salad with tofu??

I'm bringing lunch to my husbands Grandma who is supposed to be watching her cholesterol.

However, she wants me to make an egg salad. So I was going to see if tofu would work.

Or is there something else that is similar to an egg salad that would work? Thanks

  1. Here is a recipe for tofu egg salad that I use a lot:

    1 box of Mori-Nu silken firm tofu

    1/2 teaspoon turmeric

    1 teaspoon Spike seasoning

    1/4 cup Vegenaise mayo

    Pat the tofu dry and then mash it up. Add turmeric and Spike, then mix the Vegenaise mayo in.

  2. Adding mustard to the tofu may give it a more 'eggy' taste. I find that somewhat offputting, however.

  3. You can scramble some "egg beaters" or just use the egg whites (save the yolks to put in YOUR egg salad:) ...  But, you could also fold some small pieces of extra-firm tofu in too.  It would pick up the flavors of the mustard & mayo...  Be gentle, so that you don't stir it into a mush

  4. There is a tofu egg salad, but I suggest making an egg salad and only using the hard boiled whites (maybe add only 1 yolk, but you can decide).  In an egg salad, the cholesterol is from the yolks and the mayo.  So use lite or fat free mayo and the hard boiled egg whites.  Add some mustard, and paprika for flavor and some finely diced celery for crunch.

  5. Here is one of the first recipes I ever tried after going vegan.  I still make it about once every two weeks.

    Tofu Egg Salad

    16 oz. extra firm tofu (not silken), drained and pressed to get most liquid out

    2 celery stalks, minced

    1-2 pickles minced

    1-2 cloves garlic, minced

    1/2 cup Vegenaise or other eggless mayo

    1-1/2 tablespoons mustard

    1/2 teaspoon salt

    1/4 teaspoon turmeric (for color)

    minced parsley (optional)

    Crumbled or cut tofu into small cubes into a large bowl and add the rest of ingredients.  Stir until well incorporated.  Serve with bread/pita/tortillas or on a bed of greens for a salad.
