I have some eggplant, and I am thinking of making eggplant "parmesan" tonight, with Ener-G egg replacer and bread crumbs. The only vegan eggplant parmesan recipe I've been able to find calls for tofu, which I don't have. I checked the egg replacer label and it says it can be used in baking recipes like cakes and quiche. I don't see any mention of breading. Has anyone here made breaded veggies with egg replacer? Did it come out very well?
