Question:

Can you make pate - without using butter?

I've never made it before. The recipe I have calls for a lot of butter - I don't usually eat that much fat. Is there an alternative way - with a little less fat. I only bought chicken livers as I thought it would make a 'healthy' meal in some way - but pate or pan fried seem the only options.

Unless anyone has any other suggestions. If not - I might try poaching it.

  1. Yes "google" healthy chicken liver recipes.  Enjoy!

  2. I've never made it without butter, but in those types of situations I would normally just try it without.  For example - I normally make humous without the large amounts of oil you are supposed to use!!

If I were you I'd give it a go, using a little butter.  I think the worst that will happen is that it will be a different consistency from normal.  Make sure you add lots of garlic.  I love chicken liver pate!!

  3. PATE'

    2 c. white flour

    1 tsp. baking powder

    1 tsp. salt

    1/2 c. shortening

    Small amount iced water

    1 qt. cooking oil

Sift flour with baking powder and salt. Cut shortening into flour mixture until the crumbs are the size of peas. Moisten with just enough water to make consistency of pie dough. Turn out on floured board and roll out to thickness of 1/4 inch. Cut into circles about 6 inches in diameter. Put prepared filling on one half of circle, fold pastry over, moisten edge with water, and press or crimp edges together by hand or with fork.

Heat oil to 375 degrees. Drop into hot oil and cook until they float and are golden brown. Remove and drain briefly on paper towel. Serve hot.
