Can you marinate meat in fruit juices?

We have lots of pears and apples growing in our yard, more than we can eat. I'm thinking of ways to use them.

Can I marinate beef, pork, poultry in the juices of those fruits?

  1. Why not.  Cooking is all about experimenting, right?  Just be careful of citrus juices as they actually start the cooking process and overmarinating in them will cause problems.

  3. Pear juice is great for beef. Add some garlic, soy sauce and sesame oil.

  4. um, ew, why would you want to do that. it would taste like fruity meat. yuck!

  5. Yes! Apples would be best for steak and pears would be best for chicken. Grilling them would be the best way to cook them.

  6. Absolutely. Pork and apples are a classic combo and I often use apple juice as part of my marinade for pork. I don't really care for pears so I can't give much info on that. Most fruits have acids that break down meat fibers and help tenderize. A lot of bottled marinades have fruit juice as an ingredient.

  7. Yes!  There used to be a Yucatecan (Yucatan style) restaurant in San Francisco that marinated pork and chicken in fruit juice and then grilled it, and it was GREAT!  They went out of business when the owner died, and I still really miss that place.


  8. i sometimes marinade chicken in orange juice and soy sauce, so fruit juice is great for marinades. just make sure to balance out the sweetness...
