Question:

Can you microwave eggplant?

I was curious as to if you could or not. Well what I would do was chop it up into big pieces or something and then microwave it or do you have to just bake it. And how long would you bake it? Just plain...in tin foil or over a sprayed pan...

  2. I personally would broil it or bake it at a high heat. Around 450*. Drizzle olive oil on it, top with some salt and pepper and wallah!!!

    INGREDIENTS

    1 large eggplant

    2 tablespoons tahini

    1/4 cup lemon juice

    1 tablespoon minced garlic

    1/3 cup olive oil

    salt to taste

    DIRECTIONS

    Pierce the eggplant 4 or 5 times with the tip of a paring knife. Microwave on High for 6 to 8 minutes until softened, then place on a plate, and allow to cool to room temperature.

    Peel off the skin and stem, discard. Roughly chop the eggplant and place into the bowl of a blender along with the tahini, lemon juice, garlic, and olive oil. Puree until smooth, adding water if needed to make a thick paste; season to taste with salt.  

  3. Yes you can microwave a eggplant just not for too long. There is something about it that when it is heated too long it tends to like...well...explode.



  4. Yes, You Can Microwave it!

    1 eggplant, about 1/2 pound

    4 tablespoons olive oil

    salt

    1 tablespoon minced fresh parsley

    Cut the eggplant in half lengthwise. Sprinkle the olive oil and a little salt over the top of each half.

    Place on a plate and microwave on high for 4 minutes, turning once.

    Sprinkle with the minced parsley. That's all. It will serve two
