  3. I restrict my answer to Paris since you have asked your question in the Paris section.

    Tourist "must sees" are the "sights" like the Eiffel Tower, Arc de Triomphe, Notre Dame, Saint Chapelle, Sacre Coeur, Invalides, and the Pantheon and the museums, namely,  the Louvre, Musee d'Orsay, Cluny, Centre Pompidu, Orangerie, and Rodin Museum.

Everyone seems to be naming Parisian attractions.  I really liked Paris, but I also enjoyed traveling in southern France a lot.  Nice was a lot of fun and a great place to party all night and lie on the beach all day.  Also, the tiny towns around the Verdon river were amazing.  Chasteuille (sp?) was probably my favorite.  It's a tiny town that used to be an artist colony and is made up of tiny stone houses surrounded by breathtaking scenery.  Also, it's a hiker's paradise.  There are a million places to explore and beautiful sites to see!
