I just became a vegetarian and I don't really know what to eat right now. I would like to know some of your personal favorite recipes or recommended ones.

Thanks in advance

  1. I've been a vegetarian for about 4 1/2 years now.

Tofu is a really good thing to eat, esp. the fortified kind cause it has vitamins and protein. It can be cooked all different ways and taste like anything...all depends on how you season it. (covering slices of  it in vegetable stock and then frying it is good) also eat beans, and dark, leafy veggies.

i dunno if that helped, but if you have more questions feel free to ask me :)

  2. Hi, congrats on going veg! There are lots of recipes to choose from. Here is The Vegetarian Society's Recipe Index, as a veggie I found it very useful:

I like the recipes on Chooseveg.com too, they're simple but tasty and nutritious:

Whipped Sweet Potatoes (I made these yesterday! Highly recommended)

Happy cooking. :) I hope you enjoy being vegetarian. If you need any help (with nutrition etc) feel free to e-mail me.

  3. Hey hey :)

These are some of my fav recipe sites, be sure to check 'em out, there are some vegan recipes too which you can also try...or just change the dairy substitutes if you want i.e soy to cows milk etc.

  4. http://www.recipezaar.com/ and http://vegweb.com/ are my top fave recipe site. On recipezaar, type in on the search option "vegan" and a thousand of recipes will appear. I've tried some and they are great. On vegweb, the recipes are great too and its very motivating seeing a lot of people are vegetarians and vegans. WOW!!

    My personal fave:

Vegan Breaded, Fried, Softly Spiced Tofu

1 (16 ounce) package extra-firm tofu, drained and pressed

1 1/2 cups vegetable broth or stir fry mix

    3 tablespoons vegetable oil

    1/2 cup all-purpose flour

1 tbsp vegan marinade powder mix

    1 teaspoon salt

1/2 teaspoon freshly ground black pepper

Cut pressed tofu into 1/2-inch thick slices; then cut again into 1/2-inch wide sticks.

Place tofu in a pan, and pour broth or stir fry mix that was dissolved in 1 ½ cup water over the top. Simmer for 10 minutes.

In a separate bowl, stir together flour, salt, pepper and marinade powder mix.

Warm oil in a large skillet over medium-high heat.

Let tofu get warm until you can tolerate the heat when you touch it, and squeeze most (but not all) of the liquid from them or just tissue the liquid from it.

Roll sticks in breading. (You may have to roll sticks twice to end up with a fairly dry outer layer of breading.)

Place tofu in hot oil; fry until crisp and browned on all sides. Add more oil if necessary.

    Vegan Sloppy Joes

    • 1/4 tablespoon oil

    • 1/4 cup coarsely chopped onion

    • 1/2 medium green bell pepper, coarsely chopped

    • 3/8 cup water

    • 4 ounces can tomato sauce

    • 1/4 tbsp chili powder (more to taste)

    • ¼ tbsp Chinese spices

    • ¼ tbsp black pepper

    • 1/2 tablespoon organic sugar

    • ¼ tsp crushed garlic

    • 3/8 cup dry textured vegetable protein (TVP) beef type

Heat the oil and sauté the onions, pepper and garlic for 5 minutes. Add the remaining ingredients and simmer for 20 minutes. Serve over vegan rolls and breads.

Vegan Crème Au Café (Vegan Coffee Blanc-Mange)

    ½ cup soymilk

    ¼ cup strong coffee cold

    1 2/3 tbsp cornstarch

    1 2/3 tbsp coldwater

    1 2/3 tbsp organic sugar

    1/3 tsp vanilla extract

    1/3 pinch salt

    1. In a pot over medium-low heat, put the soymilk, the coffee, the sugar and the pinch of salt.

    2. In a small bowl, whisk the cornstarch with the cold water. Add to the pot.

    3. Cook, stirring constantly for 15 to 20 minutes.

    4. Add the vanilla.

    5. Lightly oil a mold in a fancy shape.

    6. Put the mixture in the mold. Let cool then refrigerate for at least 2 hours.

  5. 6 eggs, 1/2 cup brocoli, 1/2 cup any other type of veggie, 1/2 pack of low fat cream cheese, salt/pepper/chives/etc

    mix

pour into a greased pie pan

bake at 375 for about 30 minutes or until it is no longer runny
