  1. Hi, here's something quick and simple:

    Ingredients:

    3 cloves garlic, chopped

    250 grams pork tenderloin

    1-2 tbsp red curry (depends on how hot you want it)

    100 grams green beans, cut into 1 inch pieces

    Saute garlic in 2 tbsp oil. Add the red curry and mix. Add the pork tendeloin next and stir fry for 2-3 minutes. Add 1/4 cup water, bring to a boil then add the beans. Stir-fry till beans are half cooked. Remove from fire and serve.

    Red Thai Curry with chicken (Gaeng Phed Kai sai Nawmai):

    1 lb boneless chicken breast

    1 can bamboo shoots, sliced

    3 tbsp red curry paste

    2 cups coconut milk

    2 fresh red chili, sliced diagonally

    1/2 cup thai sweer basil leaves, torn

    2 tbsp fish sauce

    1/4 tsp salt

    1 1/2 tsp palm sugar or regular sugar

    Thai basil leaves for garnish

    Directions:

    Wash the chicken, slice diagonally into 1/2 cm thick, 3 cm wide and 3 cm long pieces. Thinly slice the bamboo shoots (if not already sliced).

    Pour 1 cup of coconut milk into a wok. Bring to a boil over medium high heat, stirring constantly. Add the curry paste, stir until red oil comes to the surface. Add the chicken and saute until it turns white and is cooked through.

    Add the remaining coconut milk, follow with the bamboo shoots. Season with fish sauce, sugar, and salt and bring back to a boil. Sprinkle with kaffir lime leaves, chilies, and sweet basil leaves. Turn off the heat. Arrange on a serving dish and garnish with sweet basil leaves before serving.

    ***Notes: If Thai sweet basil is not available, either omit or substitute other fresh herbs such as coriander or European basil.

  3. This is the easiest!  It's very basic but also tasty.  

    THAI RED CURRY

    4 boneless skinless chicken b*****s

    1 T vegetable oil

    3-4 tbsp Thai red curry paste

    1 can coconut miik

    your favorite veggies (red peppers, baby corn, bamboo...)

    Jasmine rice

    Directions:  

    Cut chicken into 1 inch cubes. Saute in oil until chicken turns white.  Add veggies. Mix in red curry paste; cook for a couple of minutes Add coconut milk. Simmer for 5 minutes. Serve on rice.
