I am a senior and still don't know what career I want to pursue. But anyways, what are the names of the people who dissect the dead sharks or whales? Also, what is the salary range?

People generally do not have jobs just dissecting sharks and whales.  If you are a scientist who is studying sharks or whales or if you are looking for evidence of certain diseases caused by environmental contaminants, then you would possibly dissect some.

These would be marine biologists, zoologists, ecologists, mammalogists (who study marine mammals), or ichthyologists (who study sharks).
