    BOURBONLESS CHICKEN Yield: 4 servings

8 boneless, skinless chicken thighs, trimmed of any fat and halved

    Salt and pepper, to taste

    1/4 cup low-sodium soy sauce

1/4 cup firmly packed dark brown sugar

    1/2 cup dark corn syrup

    1/4 cup balsamic vinegar

    1 tablespoon sherry vinegar

    1/2 teaspoon liquid smoke

    2 tablespoons dried minced onion

    1 teaspoon ground ginger

    1/2 teaspoon garlic powder

    Procedure:

    1. Place chicken pieces in 9-by-13-inch baking dish in single layer and sprinkle with salt and pepper.

    2. In medium-size mixing bowl, whisk together remaining ingredients and pour evenly over chicken. Cover with aluminum foil and marinate in refrigerator several hours or overnight.

    3. Preheat oven to 325 degrees. Remove foil and bake, basting frequently, until chicken is well-browned and glazed, about 1 1/2 hours.

    Serve immediately.
