Can you preserve fresh tomatoes in olive oil?

We are putting herbs in olive oil but wondered if you could do the same with fresh, not dried tomatoes?

  1. You have to be careful here.

    It depends on exactly what your trying to do ( not enough info).

    For instance you cannot preserve fresh garlic in olive oil because it will become a lethal poison.

    You can preserve roasted tomatoes in olive oil and you can preserve roasted tomatoes with cooked garlic in olive oil.  But it also depends on if your going to vacuum pack them?

    Fresh tomatoes will be to watery for olive oil but will work well with a vinegar/salt brine. Just tomatoes in olive oil? The tomatoes will go bad.

    See, the prob with olive oil is that it's not a high acid agent for preserving ( but if it's something cooked it can be done).

    It's acid( such as vinegar or vinegar added to oil) that creates an atmoshere that bacteria cannot grow in.

    So with straight olive oil you have to be careful of what your doing.

    Any uncooked veggies is not safe in just olive oil alone.

    It will go bad quickly.Some becoming lethal.( As with garlic).

    You can preserve( more easily) in a marinade of oil and vinegar but it must be vacuum packed. IE, Roasted peppers, roasted zucchini, roasted eggplants etc etc.

    Dried items such as peppers, herbs, dried veggies are OK in just oil. Fresh herbs are OK for just the cycle of the herbs life.

    With some cooked veggies it can be done with extreme care to removed any air in the jar and create a vacuuum which will inhibit bacterial growth.

  3. I've never heard of this before..but i wouldn't think the tomatoes would keep in the olive oil.
