Can you run leftover salsa from the restaurant through the pressure cooker to preserve for future use?

We LOVE the salsa from Carlos O'Kelly's and buy pints all the time. Problem is it only keeps for a week. Can we put it in jars to stock up on it? Or would it freeze? I'm just not sure of the best way to do it.

  2.   Just add a little bit of lemon before you can it, this will help to set the ph rigth.

  3. You can can it, and heat in a water bath, yes.  But ti wont' taste the same once it's been cooked!  (which canning does....)

  4. You can thermoprocess it in jars or cans if you want to and if the pH is below 4.5.   The pH thing is kind of important since above 4.5 you need a botulinum cook to avoid pathogens.  But a much easier method is to just break it up into meal sized portions and freeze it.  If properly protected it will keep for at least 6 months perhaps a year in the freezer.
